There’s just something about soup that’s ideal for cool weather. It’s as much a part of the changing seasons as boots, pumpkin spice, and cranking up the thermostat. There are all kinds of soups you can make, of course, and you could always move into chili and stew territory, as well. But pasta soup recipes are some of my favorites. They’ll usually combine veggies, starchy, carby pasta, and (sometimes) meat. If that’s what you’re craving tonight, give these dishes a try.
1. Creamy Sausage Tortellini Soup
This soup is velvety smooth, exceptionally creamy, and full of savory chunks of sausage, kale, carrots, onions, and cheese tortellini. It’s buttery and flavorful, and the garlic gives it a rich taste and a delightful smell. Also, it’s one of those wonderful soups that you can eat by itself and still get full.
2. Pasta Soup – Vegetable Soupy Pasta
This meat-free soup is so easy to make that you can have it on the table in just 35 minutes. All you’ll need is your favorite pasta, a potato, carrot, sweet corn, tomato, onion, pasta herbs, salt, pepper, and olive oil. It’s vegetarian-friendly and relatively low in calories. It’s also light, easy on your stomach, and full of that fresh garden veggie taste.
3. Ravioli Soup
If you love ravioli but hate how weighed down and overly full it makes you feel, try ravioli soup instead. It still has everything you love about ravioli – the cheese, pasta, Italian herbs, tomato paste, etc. – but it’s lighter, and the brothy base makes it taste so good. Serve it with garlic bread for the complete Italian meal experience.
4. Easy Italian Wedding Soup
Italian wedding soup is a thin broth soup with giant, juicy meatballs, pasta, and plenty of mixed veggies. It’s garlicky and earthy and takes only half an hour to prepare and cook. And don’t worry; you won’t have to wait for someone’s wedding to make it. After all, if something tastes this good and takes 30 minutes to make, you’ll want to add it to your regular meal rotation.
5. Slow Cooker Chicken Noodle Soup
As much as I love Campbell’s chicken noodle soup (and I do!), there’s nothing quite like the homemade version with flavorful chunks of chicken and melt-in-your-mouth egg noodles. If you’re looking for the ultimate in down-home comfort food, this recipe is the one for you. There are herbs, veggies, and a somewhat salty broth that’ll cure any sore throat or winter cold. Plop this on the table with a peanut butter and jelly sandwich, and the whole family will be singing your praises.
6. Lemon Chicken Orzo Soup
If you’re in the mood for chicken noodle soup but want to try something a bit different, check out the recipe for lemon chicken orzo soup. At its core, it’s also chicken noodle soup, but you’ll use orzo pasta instead of thicker egg noodles, and the lemon juice gives it a bright zestiness that not-so-subtly alters the flavor.
7. Easy Lasagna Soup
Lasagna soup is for those of us who are in the mood for Italian yumminess but prefer lasagna to ravioli. It tastes almost exactly like lasagna, but it’s a lot simpler to make. For one thing, you can throw everything into a single pot and not have to worry about carefully layering your ingredients. Additionally, it takes only 40 minutes from start to finish, so you can have it ready in no time.
8. Ground Turkey Soup with Vegetables and Pasta
This soup recipe gives you the best of both worlds – a light, flavorful broth and a ton of chunky goodness to fill you up and keep you full. It features noodles, thick chunks of succulent ground turkey, tender carrots and onions, crunchy celery, fresh herbs, and more. The beans add protein and heartiness, and the lemon juice gives it a zesty kick.
9. Tortellini Soup with Italian Sausage & Spinach
I know what you’re thinking: Another Italian-based noodle soup?! But seriously, can you ever have too many? Italians get many things right, and soup is definitely one of them. This one also has tortellini, but there are big, juicy Italian sausage chunks, too. It’s a thick, cheesy soup that you’ll make even better with a side of buttery crostini. If you’re feeling frisky, you can whip up a leafy green salad to go with it, too.
10. Minestrone Soup
Minestrone has been a favorite of mine since high school, and if you’re looking for a wallop of fresh garden flavor, you’ll love it, too. It’s delectably herb-flavored, as well, but honestly, minestrone is all about the veggies. Even the pasta – while tasty – takes a backseat to them in this one.
11. Olive Garden Chicken Gnocchi Soup Recipe
Have you ever had chicken gnocchi from Olive Garden? Did you love it? If you answered yes to both those questions (or if you’re just curious), you’ve got to try this copycat recipe. It tastes a lot like the Olive Garden’s version. It’s thick and creamy and a lot like chicken and dumplings but with more veggies and Italian herbs. The chicken is well-seasoned and healthy, the gnocchi is as soft as a cloud, and the veggies are tender and flavorful. It’s heaven in a bowl.
12. Sopa de Fideo (Mexican Noodle Soup)
Mexican noodle soup combines angel hair pasta (or spaghetti), diced tomatoes, onions, garlic, vegetable stock, Mexican zucchini, and a lime for serving. It’s light, zesty, and fantastic. It’s not one of the more well-known pasta soup recipes out there, but it should be.
13. Beef and Macaroni Soup
If you want a heartier, beefier noodle soup that still has plenty of veggies, beef and macaroni soup could be just the thing. It’s remarkably simple to make, requiring only 35 minutes of your time and 10 simple ingredients. If you have ground beef, onions, beef broth, diced tomatoes, tomato paste, Worcestershire sauce, oregano, basil, macaroni, and a bag of frozen mixed veggies, you can have it tonight!
14. Sopas (Filipino Chicken Noodle Soup)
This recipe takes chicken noodle soup to a whole new level by adding Vienna sausages, cabbage, and a can of evaporated milk to the standard ingredients. You wouldn’t think such simple changes would make such an impact, but they do. It takes a light, thin broth soup and makes it thick, creamy, and hearty enough to stick to your ribs.
15. Mac and Cheese Soup
Want to know the secret to making mac and cheese even creamier and cheesier? Turn it into soup! This yummy dish is buttery, supremely cheesy, and unbelievably delicious. It tastes just as warm and comforting as a big bowl of your mom’s mac and cheese. The only difference is that this one is soupier, and there are a few other things in there besides just macaroni, cheese sauce, and seasonings. For example, you’ll also add chopped celery, onions, Worcestershire sauce, and more. You’ll love its robust flavor, and the cayenne pepper gives it a bit of heat, as well.
16. Vegan Gnocchi Soup
If you’re a massive fan of chicken gnocchi but can’t have the chicken for whatever reason, you’ll probably enjoy vegan gnocchi just as much. It retains its rich creaminess, pillowy gnocchi, and flavorful herbs and veggies, but it’s 100% vegan-friendly. (The mushrooms give it its traditional heartiness.)
17. Pasta e Ceci (Italian Chickpea Soup)
And just in case you thought we needed one more Italian recipe on this list, I wanted to end it with pasta e Ceci, or Italian chickpea soup. It’s a lovely orangey-red soup with chewy pasta, plenty of parmesan and seasonings, lots of tomatoes, and the bold flavors of onion and garlic. It’s a vegetarian-friendly soup, but that doesn’t mean it isn’t filling and packed with protein. The chickpeas help with both of those things. There are also nearly six grams of fiber per serving! (That’s over 20% of your daily suggested intake!) This soup is healthy and tasty, and if you leave out the parmesan, it’s also vegan-friendly and dairy-free. Click on a star to rate it!
