You have your classics, like pasta and egg muffins, but why not try something a little different? How about potato and sausage soup? Or traditional toad in the hole? The beauty of these recipes is that sausages are so versatile! Between kid-friendly pork sausages, to something spicy, or even chicken, you can so easily make your leftovers something special. There are 20 super easy and delicious leftover sausage recipes here, and I’ll bet you’ll love them all!
1. One-Pot Leftover Sausage Pasta
I had to start with a pasta dish because I think sausage and pasta were just made for each other. No other meat, in my opinion, stands out like sausage when it’s mixed into a sauce. Plus, sausage holds its shape beautifully, giving you great texture, even when it’s reheated. And since it’s already cooked, all you’ll wait for is the pasta to boil! This would be even faster if you had pre-cooked pasta, which you can often find in the freezer section.
2. Cheesy Breakfast Pizza
Full disclosure: I eat pizza for breakfast all the time, and it does not always have “breakfast” in the title. But when you think about it, what’s not to love first thing? We already eat eggs and toast, right? This is just a different organization 🙂 Trust me; this will be your new go-to for weekend breakfast. Using store-bought pizza dough and plenty of cheese, this pizza is loaded with scrambled eggs and sausage. I also like to add tomato slices to the top, which will soften and blister as it cooks.
3. Dump-and-Bake Sausage and Cabbage Dinner
This is a quick and easy meal that you can usually throw together in minutes, so it’s perfect for busy weeknights. When I say “easy,” I mean just cut everything up and add it to the pot. You’ll have to stir it once or twice, but other than that, you can pretty much walk away and use that time for more important things.
4. Leftover Sausage and Pasta Casserole
This recipe is an excellent option if you have more than just sausage leftover. It calls for pasta (or potatoes) along with veggies and tomato sauce. Of course, you can easily make this with fresh ingredients and just add your leftover sausage into the mix towards the end. Another great alternative would be to use frozen ravioli for a bit more cheese!
5. Potato and Sausage Soup
As far as broth-based soups go, I often find them lacking and unfulfilling. But this recipe is far from it, being full of potatoes, veggies, and chunks of smoky sausage. Any sausage you have leftover will work for this, but it’s especially tasty with smoked sausage. You could even toss in a few shrimp if you have them for a jambalaya-like soup.
6. Goulash with Smoked Sausage and Potatoes
Goulash is usually a hearty beef stew full of beef and vegetables, and it’s such a great option for a cold winter night. But this recipe is a little different, originating in Hungary and using sausage instead. This version is less of a stew, as it has far less liquid in the pot, but it’s still very tender, and you’ll have a lovely sauce to go along with each serving.

You’ll need onion and diced peppers for this recipe, but you can easily add in tomatoes or zucchini if that’s what you have. To serve it for breakfast, try adding a fried egg to the top and maybe a few slices of avocado.

As with any good Crockpot recipe, all you need to do here is throw everything in the pot and let it cook. The combination of sausage, spinach, and buttery white beans is perfect, and if you like it a little thicker, just mash some of the beans towards the end of the cooking time.

This is like a sausage and potato au gratin recipe. It has tender potatoes with a to-die-for cheese sauce and extra cheese bubbling on top. The difference is that you won’t slice the potatoes, but instead, you’ll just add them in as chunks. My one note where would be to go for a mature cheddar or smoky Gruyere for an even better cheesy flavor.

Sausages and curry have been served together for years all over the world. The curry notes enhance the intense sausage flavors, and if you add a little spice to the mix – all the better! It’s important to note that this is not a thick curry sauce you may have tried at an Indian restaurant. Instead, it’s more like a curry-gravy, with lots of onions and peas. These are great with rice or potatoes, or even in a hot dog bun as a spicy lunch.
11. One-Pot Sausage, Rice, and Peas Recipe
Not only is this dish made in one-pot – keeping the dishes down – but it’s fast, filling, and super cheap to make. The recipe calls for jasmine rice, but I’ve used brown rice (and even a mix of white and brown when it was all I had), and it was still hearty and scrumptious. You could also throw in any extra veggies you have. I usually have a mix of frozen vegetables in my freezer, and they cook nice and fast.
12. Sausage & Veg Tortilla
This isn’t a tortilla wrap filled with sausage and veg – though that would be great too! Throw in some scrambled eggs and jalapeños, and you’ll have one tasty breakfast burrito! No, this dish is more of a Spanish tortilla, which is an egg and potato-based meal, kind of like a frittata. The veg here is shredded Brussels sprouts, which will add so much unique flavor if they’ve been roasted already.
13. Toad in the Hole Recipe
Toad in the hole is a classic English dish. It’s made up of Yorkshire pudding with sausage baked right inside – the toads in the hole. Usually served with some mash and onion gravy, it’s such a fantastic little dinner. The trick to getting your Yorkshire right is to let the batter rest for about 30 minutes and pre-heat your baking dish with oil already inside. This will help the batter crisp up and rise.
14. Smoked Sausage and Zucchini Skillet
Move over sausage and peppers; I have a new favorite! Not everyone loves the flavor of bell peppers, and some are even allergic, so this is a fantastic alternative to the classic dish. Using zucchini will add color and flavor, and I love the addition of the tomatoes, too, for some acidity.

If you’ve spent any time on the east coast, you’ll know that calzone and stromboli are super popular. The idea is to have a lot of filling encased pizza dough rather than it sitting on top. This simple recipe needs just six ingredients and about 20 minutes to prep. I’ll bet you already have most of it on hand, but if you’re missing something, it’s easy to find substitutions. For example, I live with a mushroom hater, so I swapped them out for a bit of corn and some cooked broccoli.

If you make these once, be ready to make them again. They’re addictive and such a nice change to the typical sausage and potato meals. They’re tender, like biscuits, with very distinct sausage and cheese flavors throughout. If you don’t want to chop up your leftover sausages, try forming the cheesy Biqsuick around bigger chunks. It’s just as delicious!
17. Easy Smoked Sausage Jambalaya
In essence, jambalaya is a pretty easy rice dish to make on a busy weeknight. You’ll just need to cook your rice, add in some spices and tomatoes, and then throw in whatever meat you have on hand. The rice cooks in the spices, sausage, and broth, making it burst with flavor. You can make it as spicy as you like by adding or removing chilies.
18. Sausage and Scallion Egg Muffins
You can make a whole batch of these in just over 30 minutes, and then you’ll have breakfast for the week sorted! Once your sausages are chopped, you’ll be adding cheese, scallions, parsley, basil, oregano, garlic powder, and red pepper flakes. If you want to, feel free to add in some veggies, too!

We eat beef and chicken in a cold sandwich, so why not sausages? They’re actually just as tasty, if not more so when they’re cold, and it’s a pretty snappy lunch just to slice them and put them in bread. A soft white roll would be especially good!

These are like breakfast calzone and are made using crescent rolls for a more buttery flavor in the crust. They’ll hold their shape better if you leave the sausages whole, and if you want them even flakier, why not try some frozen puff pastry instead?
