This zippy oven-baked chicken breast gets me super excited every time I make it. It’s very easy to prepare and I like its lightness and summery brightness. This chicken is made using my tried-and-true, super easy baking method for bone-in, skin-on chicken – 375F oven temperature and about a 1/3 to 1/2 a cup of chicken broth at the bottom of the baking dish. It works like magic: chicken always comes out tender, juicy and succulent. If you are looking for a reliable and a really easy chicken breast recipe, or, rather, a baking method, this one is it.
I find that the best side dish for this chicken breast is something like creamy mashed potatoes or hibachi rice, where brightness of lemon helps cut through richness of butter.
